Sugar/Carbs
It seems that carbs are the problem, mostly the sugar and maybe even more specifically the fructose in the sugar. The typical American diet is about 2,200 calories per day, with 50% of calories from carbohydrates, 15% protein and 35% fat. These macro-nutrient ratios fall within the Acceptable Macronutrient Distribution Ranges (AMDR) for adults identified by the Food and Nutrition Board of the United States Institute of Medicine as being associated with reduced risk of chronic diseases while providing adequate intakes of essential nutrients. These macro-nutrient ratios also come close to the ratios that you see in a specially developed rat food that scientists use to fatten up rodents for obesity research. Dr. Atkins was vilified as a quack but as you can see from this video his diet was based on solid science. The slides in this video are fuzzy but he is such an important figure in the low carb space that I had to add it to this web site.
